Things have been crazy around here with a three month old, so recently, Joe and I decided to step up our meal prep game. Neither one of us have a ton of time to cook during the week, so instead of ordering out every day, we’ve been spending our Sundays meal prepping and it’s been a game changer.
So I figured I’d share one of our fave new recipes – one pan sausage and veggies (adapted from this recipe we found on Chelsea’s Messy Apron). Her recipe looks super yummy, but Joe’s really picky about his veggies so we like to stick to the basics. Meat, potatoes, and either broccoli or green beans. Maybe one day we’ll venture into the world of peppers and stuff like that – but not quite yet.

Step #1:
Gather all your ingredients and wash your potatoes.
Step #2:
Chop up your potatoes.
Step #3:
Slice the sausage.
Step #4:
Chop your green beans to the size you like them.
Step #5:
Drizzle everything with olive oil. You could totally just put all the ingredients on the pan and drizzle the olive oil on top, but Joe is super OCD and like for things to be evenly coated, so we stick each item in a ziplock bag, add the olive oil, and then shake everything up!
Step #6:
After that, it’s time for the seasoning. Paprika, garlic powder, parsley, oregano, salt, and pepper. Nothing too difficult about that. We again season everything inside the ziplock bag and then keep shaking, but you could totally just sprinkle it on top of the pan.
Step #7:
Add everything to the baking pan if you haven’t done so already and bake for 15 mins at 400 degrees. After that, take the pan out, stir everything, and bake for another 10-15 mins.
Step #8:
Enjoy!
Step #9 (Optional):
Put into meal prep containers and save for the whole week.
